Everyone loves a good cheesecake but my absolute favorite would have to be a Strawberry Cheesecake. There’s something about the mixture of sweet and fruity that just makes my entire day when it comes to this sweet treat. I decided to make a smaller version of it since I’m the only one in the family who enjoys a Strawberry Cheesecake. This makes it the perfect snack size and you almost feel like you’re eating more strawberries than anything! So, really I’m just eating fruit right? Totally!
Let’s get started with what you will need to make this yummy treat!

Cheesecake Stuffed Strawberries
- 18 Strawberries
Chesecake Stuffing
- 8 OZ Cream Cheese (room temperature )
- 1/3 Cup Powdered Sugar
- 1 TSP Vanilla Extract
- 1 TBSP Heavy Cream
Graham Cracker Crumbles
- 1/3 Cup Graham Cracker Crumbs
- 1 TSP Sugar
- 1/2 TBSP salted butter (melted)
Strawberries & Cheesecake filling
Slice off the bottom of the strawberries so that they are able to stand up
Cut the green top out at a slant but be careful not to cut too deep and make a hole in the bottom of the strawberry.
In a mixing bowl, add in the cream cheese, powdered sugar, vanilla extract and heavy cream. Beat with a mixer until creamy.
Add the cheesecake mixture to a pipping bag or use a sandwich bag. Cut a small hole in the pipping bag or corner of the sandwich bag.
Fill each strawberry with the cheesecake filling. Put in the fridge to stay cool while you mix together the graham cracker topping.
Graham Cracker Topping
In a small bowl, stir together the graham cracker crumbs, sugar and melted butter.
Take strawberries out of the fridge and dip the top of the strawberry into the graham cracker mixture.
Store in the fridge or serve immediately.

A 15 minute recipe turns into a delicious treat that you can snack on while the kids are sleeping to give you that extra boost to make it through the day. I know that sweets are my absolute downfall so when I’m stressed out it’s the perfect thing to help me make it through the day. Plus, the kids enjoyed it as well for a little afternoon pick me up after their nap and school. I love finding yummy treats that the whole family can enjoy and also that can double as something you can take to your next get together with family.
This is a bit of a quick snack but also takes lots of precision because you want to be sure that you don’t cut too deep of a hole into the strawberry or else you will go straight to the bottom and then it’s pretty much ruined at that point. Think deviled eggs, you have to keep a smooth area for you to fill it up!

Can i make these in advance?
Definitely make these the same day as serving because once the cheesecake filling hits the strawberries, they will need to be consumed within the next few hours.
can i use frozen strawberries?
No. You will need to use fresh, firm strawberries for this recipe.
