Lucky Charms are definitely a favorite cereal around this house and so I knew that I had to find a delicious cookie recipe to make them because why not create some yummy St. Patrick’s Day treats! I found this recipe and knew that it would come out delicious because I had heard all about how pudding mix actually can make some of the softest and sweetest cookies. So one day while Gracelyn and Adylee were at school, Giovanni and I made some yummy cookies together.
Let’s get started with what you’ll need!
Lucky Charms Pudding Cookies
- 2 1/4 Cups Flour
- 1 TSP Baking Soda
- 1 Cup Salted butter (softened)
- 3/4 Cup Light Brown Sugar (packed)
- 1/4 Cup Sugar
- 1 PKG Instant Vanilla Pudding Mix
- 2 Eggs
- 1 TSP Vanilla Extract
- 1 Cup Lucky Charms Marshmallows
- 1 Cup White Chocolate Chips
Preheat oven to 350
Combine flour and baking soda in bowl. Set aside.
Cream together butter and sugar in a bowl. Beat in instant pudding mix until blended. Add vanilla and eggs. Blend.
Add flour mixture and combine thourougly. Add in chocolate chips and then gently fold in marshmallows.
Place rounded tablespoon sized dough on ungreased cookie sheet. Bake for 10-12 minutes. Let cool for 2 minutes before removing from cookie sheet.
These cookies are seriously DELICIOUS and while there are lots of ingredients they are fairly simple to make. The end result is perfection though. Some of the softest cookies I have ever made. Plus, I got to make them with Giovanni which gave us some mother/son bonding time while the girls were at school. I truly do cherish those moments because he won’t be my little boy forever and he’ll be able to remember how he made cookies with mommy one afternoon and then sat on the couch and watched The Grinch (mixing all kinds of holidays together) together while we ate some of them. Truly memorable moments with my littles.
