Being a busy mom of three I am always looking for some quick lunches to grab. Especially when I am running errands because if I don’t have something quick, it’s almost 99% a possibility that I won’t eat which isn’t good either. So I compiled a list of my top 5 favorite things to do for lunch so that if you’re like me, you can make these super quick and head out the door.
Avocado on toast with Trader Joe’s Everything But The Bagel Seasoning is one of my favorite things to eat that’s quick and filling. I usually toast some protein bread like Dave’s Killer Thin Sliced bread and then mash up some avocado and spread it on top. Then I just top with the bagel seasoning and it’s absolutely delicious. Be mindful of how much avocado you are putting on the toast as it is high in carbs & fat but, a little bit is truly all you need for this quick toast.
Chicken and cheese roll ups are always a go to for me. I take deli meat that I had sliced and some cheese and just roll them up. Super simple! My favorites are definitely Boars Head Blazing Buffalo Chicken and then Provolone Cheese. The chicken has a bit of a spice to it which I love. I usually eat about 4 and have some type of cracker with it. Here I have it paired with some Baked Ruffles.
You can’t go wrong with a classic egg salad. Sometimes I’ll put the egg salad on the Dave’s Killer bread that I use for my avocado toast while most of the time I’ll just use classic white bread. Not much more than this is classic and totally easy to make.
Sometimes I eat this alone and other times I’ll pair it with the chicken and cheese roll ups. I just cut up cucumbers, tomato, black olives, and add some Italian dressing and you’re good to go. Like I said, sometimes I’ll eat this alone if I’m pressed for time and other times I’ll just add it to whatever else I’m eating. It’s super quick if you have the cucumbers and tomatoes pre-cut in the fridge.
Lastly, these pizza roll ups are are great if you’re wanting pizza but pressed for time. We always have tortillas in the house so I just use whatever we have left over and spread some shredded mozzarella on it and then top with pepperoni. I roll it up as tight as I can and stick it in the microwave for a few seconds to melt the cheese. I then cut it up and there you go! Again, you can pair this with some light crackers or even the cucumber and tomato salad above.
I am all about quick lunches and these are the ones that I have found that work for me. I also will eat the Million Dollar Tortilla Roll Ups that I have posted for lunch as well since I usually always have some of that left over. That’s also a super simple thing to make in advance and then eat when you’re running errands all day.
