Nachos is our family’s favorite meal and usually our go-to meal when we don’t know what to eat. There’s a million ways to make them for sure but our favorite way is definitely these crockpot chicken nachos. Crockpot meals are always a hit because you can just throw the entire meal in it, put the lid on and go about your day. At the end of the day, your entire meal is done and you can just serve straight from the crockpot. It’s a mom win for sure.
These chicken nachos are a total fan favorite in the house and has been one recipe I totally came upon on a whim. I originally was going to make Fiesta Chicken but we ended up not having all the ingredients so I took what we did have and said “NACHOS!”

Crockpot Chicken Nachos
- Chicken Breasts (about 4 or 5 )
- 1 Can Rotel
- 1 pkg Taco Seasoning
- Cayenne Pepper (to taste)
- Salt & Pepper (to taste)
- Chili Powder (to taste)
Put chicken breasts, rotel & all seasoning into crockpot. If it seems dry, add in a small amount of water. Cover.
Turn on high heat for 4 hours or until chicken is able to be shredded with a fork. Shred chicken.
Put chicken back and stir in juices. Then scoop onto nachos and top with your favorite toppings




Top this recipe with your favorite toppings and enjoy! We tend to rotate this meal and Fiesta Chicken for every Taco Tuesday because you cant go a single Tuesday without eating tacos or nachos in our home.
